3-in-1 Quinoa Lentil Soup

Serves 6-8

With 15 grams of protein and 6 grams of fibre per serving, this stick-to-your-ribs soup will warm you up from head to toe.  With three different ways to enjoy it, the 3-in-1 Quinoa Lentil Soup is sure to please. 

1 c lentil
½ c quinoa
½ tsp ground thyme or 1-3 fresh sprigs
2 large carrots, diced
2 celery stocks, diced
½ tsp onion powder
8 c stock, vegetable or chicken
1 onion, chopped fine
1-2 garlic cloves, minced
1 tbsp oil
1 c diced tomatoes and juice (fresh or canned)
Salt and pepper to taste
1 tsp red wine vinegar or lemon juice

Place lentils, quinoa, thyme, carrot, celery and stock into a large pot. Over high heat, bring mixture to a boil stirring occasionally.  Once mixture has boiled, turn heat down to low.  Cook for about 30 minutes or until lentils are soft, stirring occasionally.  
Meanwhile, mince garlic and allow it to sit for 10 minutes. Chop onion. Heat a fry pan with approximately 1 tbsp oil. Add onion and cook until soft. Add garlic and cook for another 1 -2 minutes.
When lentil mixture is cooked, add the onion/garlic, tomatoes, and red wine to the mixture and stir to combine.
Simmer 10 minutes to thoroughly heat and combine flavours.

Option 1 (shown in picture)
Serve into bowls and garnish with parsley and crumbled bacon.

Option 2
Add the following ingredients to the recipe:
½ c chopped fresh cilantro
1-2 tbsp minced fresh ginger
¼ tsp cayenne pepper
½ tsp ground coriander
½ tsp ground cumin
Garnish with plain Greek-style yogurt and freshly chopped cilantro

Option 3
Add the following ingredients to the recipe:
1 c cooked Italian sausage, cut in pieces
¼ c chopped fresh mixed herbs - rosemary, oregano, thyme, basil (or 1 tsp dried Italian seasoning)
