Veg Out in the Great Outdoors

Whether you cook these tasty bits in the oven, on the BBQ, or camp-side, these simple veggies add the “great” to the eating outdoors this summer.


- 1 cup each chopped organic vegetables: carrots, potato, parsnips, cauliflower or broccoli florets, brown or white mushrooms, onion and any or all colours of bell pepper
- 1 Tbsp vegetable oil
- 2 Tbsp herbs and spices (make your own mix of garlic, rosemary, parsley, and/or salt and pepper)


Place prepared veggies, oil and seasoning into a large bowl and toss to coat.
Distribute into foil packets, folding up the edges to seal the veggies in.

Oven: spread evenly on a baking sheet and cook at 375F for 35 minutes or until tender

BBQ: place packages on coals for 20 minutes until tender (flip or open and stir) half way through (Tip: Some barbecues come with vegetable baskets - if yours has one, line with foil for easy clean up)

Campfire: use the grate (if there is one) or place packages on coals for 20 minutes until tender
