Vegan Taco Mix

Rethink Taco Tuesday with this speedy and delicious filling. Easily used in tacos, fajitas, burritos, atop salad or tucked in your favourite nourish bowl.  Serves 4.


4 whole-grain or gluten-free tortillas
1/2 cup  each cashews, almonds and sundried tomatoes (in oil, drained)
1-2 tbsp taco seasoning mix
1 1/2 cup mixed beans of your choice (if canned, drain and rinse first)
1/2 cup each salsa and guacamole
1 cup plain vegan or dairy-free Greek yogurt
Lettuce, shredded
Nut, soy, or other vegan cheese, shredded (optional)


Place cashews, almond, tomatoes and seasoning in a food processor and pulse until blended.  Serve on a tortilla and top with salsa, guacamole, beans, yogurt, lettuce and cheese, if using.  Enjoy with a green salad or veggies on the side.
