Drizzled Strawberry Cucumber Salad


After enjoying this colourful, light and refreshing salad last summer we knew it had to be shared with our Pomme family again.  With the season’s first strawberries having arrived, we knew it was time!


2 pints (1 lb) strawberries, washed stemmed and sliced to desired thickness

2 large cucumbers, washed and thinly sliced

¼ cup white balsamic vinegar

¼ - ½ cup honey, to taste

Mint leaves, for garnish (optional)


On a medium-sized serving plate, alternate layers of the strawberries and cucumbers (making a pattern that goes all the way around the plate.) In a small bowl, whisk together the honey and balsamic vinegar.  When ready to serve, drizzle dressing over the salad and enjoy immediately.
