Fresh Tomato Salad

Serves 6

Even though it's September, summer isn’t over yet, especially given the bountiful harvest of fresh and delicious produce. This simple salad packs all the flavours of summer into every mouthful.

1 Tbsp small capers
4 large tomatoes (or 6 Roma)
1 small English cucumber, unpeeled and sliced thin
1 celery stalk, sliced
1 white onion, small, sliced paper thin
10 small black olives
Leaves from 1 large fresh sprig of thyme
¼ cup extra virgin olive oil
1 ½ tbsp. red wine vinegar
Salt and fresh ground pepper to taste
1 tbsp fresh flat-leaf (Italian) parsley

Place tomatoes, cucumber, celery, onion, and capers in a wide shallow bowl, scatter the olives, and the thyme over the top. Drizzle with the olive oil and vinegar and season with salt and pepper. Just before serving, sprinkle with the parsley, toss at the table and serve at once.
