Raw and Vegan Peppermint Patties!

Filling Ingredients:
Coconut Flour - 1/3 cup
Raw Cashews - 1/3 cup
Filtered Water - 1 cup
Coconut Oil - ΒΌ cup
Coconut Nectar - 3 tbsp
Mint Extract - 2 tsp
Pink Himalayan Salt - 1/8 tsp

Coating Ingredients:
Vegan Dark Chocolate chips – 1 cup
Coconut oil - 2 tbsp

Prepare filling:  

Soak cashews in filtered water, set aside overnight or for at least 2 hours.

Drain and rinse the soaked cashews and pour into mini food processor.  Add the coconut flour, melted coconut oil, coconut nectar, mint extract and pink Himalayan Salt. Blend for two minutes or so until completely smooth.

Portion the filling into little balls.  Place on tray and flatten into patties.  Place into the freezer for at least 30 minutes or until they get hard.

Prepare coating:

Melt chocolate chips and add melted coconut oil to thin it. Mix thoroughly.

Remove patties from the freezer and use a fork to dip them into chocolate coating. Place on tray covered with parchment paper.

Put back into freezer until set.
