Nutrient packed, fibre filled energy snack. A great pick-me-up and perfect for pre or post workout - a meal on the go!

Preheat oven 350°F.
Mix dry ingredients into large bowl:

Quick Oats – 1 cup 2 tbsp
Spelt Flour – 1 cup
Cane Sugar – ½ cup
Cinnamon – 1 ½ tsp
Sea Salt – 1 1/8 tsp
Flax Seeds – 2 tbsp
Chocolate Chips – ¾ cup
Raisins – 2/3 cup
Sunflower Seeds – 1 cup
Pumpkin Seeds – 6 tbsp
Flaked Coconut – ½ cup

In a separate bowl whisk together wet ingredients:

Molasses – 2 tbsp
Filtered Water – 2 tbsp
Coconut Oil Melted – 6 tbsp
Coconut Beverage – ½ cup

Add the wet mixture into the bowl of dry ingredients. Stir with a spoon until just combined. Line baking tray with parchment paper. Portion cookies onto tray and flatten with wet hands.

Put into the oven and bake for 24 minutes.
