/Radish Arugula Salad
Fresh and crisp with a lively kick! Enjoy the taste of spring with this yummy salad.
Ingredients
1 medium carrot  
3 tbsp extra virgin olive oil  
1 tbsp fresh lemon juice  
1 tbsp red wine vinegar  
1/2 tsp salt  
1/8 tsp pepper, freshly ground  
4 small endives  
1/2 lb (227g) radishes, trimmed and sliced  
2 cups baby or wild arugula  
1/4 cup roasted chopped almonds
Directions
Using vegetable peeler, peel carrot into ribbons. In a large bowl whisk together oil, lemon juice, vinegar, salt, and pepper until well blended. Add all other ingredients and toss until combined.
