This Walnut Pesto is an earthy, protein charged version of a classic Italian pesto that is easy to make, smells divine, and tastes even better! Serve on your favourite pasta, or on spring greens with goat cheese and roasted beets.
Handful of organic basil leaves
Handful of organic flat-leaf parsley
1⁄2 cup freshly grated Parmesan cheese
1 clove organic garlic
3⁄4 cup chopped organic walnuts
1⁄2 cup olive oil
Sea salt and fresh ground pepper, to taste
Place basil, parsley, Parmesan cheese, garlic and walnuts in a food processor. Pour olive oil over mixture and blend until chunky. Season with sea salt and freshly ground pepper. Keeps well for several days in the fridge.
