Vegan Chocolate-Covered Beet Bliss Balls

Presenting pure bliss in the form of these exquisite balls made with feel-good ingredients, including the unexpected addition of beets for natural red colour and a little extra nutrition. These absolutely gorgeous and divine treats are the perfect way to spread some love.

 

Ingredients:

For the Beet Bliss Balls:
1 cup raw beets, peeled and grated
1 cup dates, pitted
1 cup almonds
2 tablespoons coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
A pinch of salt

For the Chocolate Coating:
1 cup dairy-free dark chocolate chips
1 tablespoon coconut oil

Optional Toppings:
Shredded coconut
Crushed nuts
Dried edible rose petals

Directions:

Prepare the Beet Bliss Balls:
In a food processor, combine grated beets, pitted dates, almonds, coconut oil, maple syrup, vanilla extract, and a pinch of salt.

Blend the ingredients until they form a sticky, uniform mixture.

Shape the Bliss Balls:
Scoop out portions of the mixture and roll them into bite-sized balls using your hands.

Place the formed bliss balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Prepare the Chocolate Coating:
In a heatproof bowl, melt the dark chocolate chips and coconut oil together using a double boiler or in short bursts in the microwave.

Stir the mixture until smooth and well combined.

Coat the Bliss Balls:
Using a fork or toothpick, dip each chilled bliss ball into the melted chocolate mixture, ensuring it's fully coated.

Allow any excess chocolate to drip off before placing the coated bliss ball back on the parchment-lined tray.

Add Toppings (Optional):
Sprinkle shredded coconut, crushed nuts, or crumbled rose petals on top of the chocolate-coated bliss balls before the chocolate hardens.

Chill to Set:
Place the tray of chocolate-covered bliss balls back in the refrigerator to allow the chocolate coating to set completely.

Serve and Enjoy:
Once the chocolate coating has hardened, your vegan chocolate-covered beet bliss balls are ready to be enjoyed!
