Homemade gourmet pizza on a weeknight you say? Yes way! This de-lish dish can be served up fast.
Leek, Potato, Gruyere & Greens Pizza
Flour for work surface
1 lb (424g) pizza dough
Cornmeal for pan
2 small organic leeks (white and light green parts), cut into thin strips
2 medium organic red potatoes, thinly sliced
1 tsp fresh thyme
3 tbsp EVOO
Salt & pepper
1/4 c grated Gruyere
4 c organic mixed greens
Heat oven to 450°F. On a lightly floured surface, roll & stretch dough into ¼”-thick rectangles. Sprinkle
cornmeal on baking sheet, place dough on top. Combine leeks, potatoes, thyme, 1½ tbsp EVOO, salt & pepper, scatter over dough & sprinkle with Gruyere. Bake until crust is golden brown, and potatoes are tender (~20-25 min). Cut, serve with greens on top, yum!
