Enjoy the taste of Tuscany in this Italian-inspired dish!
Preheat oven to 400°
1-1/2 lb fresh asparagus, trimmed
1-1/2 cups grape tomatoes, halved
3 tbsp pine nuts
3 tbsp EVOO, divided
2 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
1 tbsp lemon juice
1/3 c grated Parmesan cheese
1 tsp lemon zest, grated
Place the asparagus, tomatoes and pine nuts on a baking sheet. Mix 2 tbsp oil, garlic, salt and pepper; add to asparagus; toss to coat.
Bake 15-20 min, drizzle oil and lemon juice, sprinkle with cheese and lemon zest. Enjoy.
