Braised Greens

Don’t let cold weather deter you from fabulous BC greens. Enjoy this delicious mix hot or cold!

Ingredients

2 large handfuls swiss chard
2 large handfuls chicory
2 tbsp olive oil
2 large cloves garlic, thinly sliced
Salt and freshly ground black pepper, to taste
2 large handfuls arugula
1/2 lemon

Directions

1.     Fill a medium-sized pan with lightly-salted water and bring to boil. Add chard and chicory and cook 2-3 min until tender. Drain in a colander.

2.     To the pan, add olive oil and garlic and fry until garlic is lightly coloured.  Add cooked greens, season and stir to coat.

3.     Remove from heat, add arugula and squeeze in lemon juice. Stir, adjust to taste. Enjoy immediately.
