Baked Apples

These vegan, gluten-free, baked apples are a delicious way to keep your New Year’s Resolutions while enjoying something sweet

Ingredients

6 large apples, skin on, cored
1 c old fashioned GF oats
½ cup pecans chopped
1 tsp cinnamon
½ tsp each nutmeg & ground ginger
2 tbsp each coconut oil, melted & maple syrup
½ c apple cider or water

Directions

Preheat oven to 400F. Prepare baking dish with coconut oil and place apples in dish. In a bowl, mix all ingredients (except apple cider), divide evenly between cores, press filling towards the center. Add apple cider to bottom of dish. Cover & bake ~ 30 min, baste apples every 5-10 min, uncover for last 5 min.
