Grain and Bean Salad

This is a great way to use leftover grains and grasses like orzo, quinoa and wild rice. Adjust dressing to taste. Serves 3-4.

Ingredients

1 ½ cup cooked grain or wild rice
2 Tbsp red onion, diced
½ cup canned organic black beans, rinsed
1/2 bell pepper, finely chopped
1 cup cooked corn kernels
2 Tbsp chopped cilantro
1/4 cup EVOO
1 lime, juiced
¼ tsp. ground chili pepper
1/2 tsp. sea salt

Directions

In a small bowl, whisk together the lime juice, olive oil, chili pepper and sea salt.

Add the lime vinaigrette to the rest of the ingredients in a medium bowl and toss gently to coat.
