Blackberry Banana Infused Overnight Oats
If you haven’t yet tried overnight oats, well, this is the recipe for you! It’s a perfect breakfast for a hot summer morning—you get all the fibre and blood sugar balancing benefits of oats while keeping things cool. This recipe also offers the vitamin-packed awesomeness of fresh fruit and yummy hint of vanilla.
1 cup blackberries, plus a few more for topping
1 banana, divided
½ c plain or vanilla almond, soy or coconut milk
½ tsp vanilla extract
½ cup rolled oats
Optional toppings: slivered almonds, unsweetened coconut, orange zest
Place blackberries, ½ the banana, ‘milk’ and vanilla in a blender and mix until completely smooth. Pour into a glass jar, stir in oats and cover. Place in refrigerator overnight. When ready to eat, add the other ½ of the banana, a few blackberries and any other topping(s).
