Pear season has arrived in BC! This desert makes a luxurious ending to a fall meal. Use pears that are at the peak of ripeness.
100g Gorgonzola cheese
100g cream cheese
¼ cup hazelnuts (or walnuts), toasted and chopped
4 ripe pears, cored and sliced
Splash lemon juice
In a small bowl, use a fork to mash together gorgonzola, cream cheese and hazelnuts.
Core and slice pears. Toss with lemon juice to prevent browning and arrange on plates alongside a generous helping of the cheese mixture.
Hint: Make double the cheese/nut mixture and toss into spiralized cooked sweet potato or butternut squash or use as a topping for a roasted beet salad.
