Apple, Beet and Carrot Slaw

As a side or sandwiched right in, this colourful and crisp slaw serves as a tasty add-on to veggie burgers, nut loafs and lentil meatballs.  Choose Granny Smith apples for their crisp, tart taste.  Add chopped walnuts and raisins or drizzle on a little honey for a punch.

Ingredients

2 apples
2 large beets
2 large carrots
1 Tbsp olive oil
2 lemons (juice and zest)
S&P

Directions

Using a food processor or box grater, shred apples, beets and carrots. Combine in a large bowl. Add remaining ingredients, stir to combine and serve.
