Fall Veggies Hummus Bowl

Bowls are definitely one of the most simple and satisfying meals you can make, and they can pack a huge amount of nutrients that will help keep you super healthy. One of the best ways to keep them on the top of your meal rotation is to ensure you change them up with the seasons. Get creative this fall with delicious bowls that include a bunch of the veggies that are being harvested in BC right now! We’ve listed some of our fav ingredients below but, really, anything goes.

Ingredients

4 cups spinach
2 cups store bought or homemade hummus
6 cups rough chopped veggies (broccoli, cucumber, and tomatoes)
2 bell peppers (red/orange), sliced thinly
½ red onion, sliced thinly
2 cups bulgur or brown rice
1/2 cup pitted kalamata olives, optionaL
EVOO, S&P to taste
Optional: vegan or cows’ milk feta

Directions

Divide all the ingredients into four bowls, drizzle with EVOO, S&P - and enjoy!
