Fig Compote

Figs are one of the true mid-summer fruits—somehow they always taste sun-warmed. The sweetness of this simple compote is just right, and the flavour is delish! Serve on a bagel or cracker with ricotta or cream cheese (or right off the spoon!) For a smoother texture, quarter the figs.

Ingredients

2 ½ cup fresh figs (10-12 figs), stems removed
½ - 1 orange, zested and juiced
¾ cup sugar
⅛ tsp salt
½ tsp vanilla

Directions

Cut figs in half lengthwise. Add figs, sugar, 1 tsp orange zest, and 2 Tbsp orange juice to a small, heavy pot. Cover and bring to a boil. Uncover, stir, and boil 1-2 min. Lower heat and simmer 45 min, stir occasionally. Once well-mixed and figs are falling apart, take off heat and stir in salt & vanilla. Cool and serve or refrigerate for use in the next 3-4 days.
