Watermelon popsicles

A deliciously simple, no-sugar added popsicle recipe!

Ingredients

1 large ripe seedless watermelon
2 tbsp lime juice

Tools

Immersion blender
1-2 sets of popsicle molds
1 mesh strainer

Directions

Cut the watermelon in half. Using the rind of each half as a 'bowl', take the immersion blender and sink it into the watermelon flesh, and puree all the fruit right there in the rind.

Once the fruit from both halves has been thoroughly blended, pour it all through a mesh strainer to separate the pulp from the juice.

Add the lime to the watermelon juice, give it a quick stir, and then pour directly into the popsicle molds. Freeze for at least 2 hours.
